What are the main plant and herbal sources of natural sweeteners, and how should we choose them?
2025.08.21
Natural sweeteners are generally a class of sweetening chemical components
extracted directly from nature or obtained through appropriate modification.
Most are secondary metabolites of plants or microorganisms. Compared to
first-generation sweeteners such as sucrose and second-generation sweeteners
such as cyclamate, natural sweeteners are not only highly sweet and low in
calories, but also possess advantages such as good solubility, pleasant taste,
and high stability. They are also generally non-toxic and have no side effects.
Some have also been found to have physiological functions such as anti-allergic
and immune-enhancing properties. Therefore, natural sweeteners can be widely
used in various foods and have enormous development and application
prospects.
Natural sweeteners commonly used in the food industry include steviol
glycosides, mogrosides, glycyrrhizin, rubusoside, and sugar alcohols such as
erythritol, xylitol, sorbitol, maltitol, mannitol, and lactitol.
Steviosides
Steviosides are a class of highly sweet diterpenoid compounds extracted
from the herbaceous plant Stevia. Over 30 known species exist, with a sweetness
approximately 150-300 times that of sucrose. Considered the "world's third
natural sugar," steviosides are widely used in the pharmaceutical, daily
chemical, beverage, food, and winemaking industries due to their low calorie
content, high sweetness, excellent stability, and low price.
Mogrosides
Mogrosides are typically extracted from ripe fresh monk fruit (commonly
known as "magic fruit" or sweetener). They are a class of glycoside compounds
with the cucurbitacin triterpenoid mogroside alcohol as the aglycone. Mogrosides
are very sweet, approximately 300 times sweeter than sucrose. As an ideal
natural sweetener, monk fruit is not a source of energy for humans and is
therefore often used as a sugar substitute for obese people and those with
diabetes. Research has also revealed other physiological benefits of mogrosides,
including antioxidant, liver protection, immune enhancement, blood circulation,
and inhibition of oral bacteria.

Licorice Extract (Glycyrrhizin)
Glycyrrhizin is a triterpenoid extracted from the root or stem of the
medicinal plant licorice. The extract is primarily composed of glycyrrhizic
acid, mixed with a small amount of glycyrrhizic acid salt. The extract is 50 to
100 times sweeter than sucrose, with glycyrrhizic acid salt being 150 to 300
times sweeter than sucrose. In recent years, glycyrrhizin has been widely used
in the pharmaceutical, food, and cosmetic industries.
Rubusoside
Sweet tea is a new species of Rubus plant in the Rosaceae family. Its
diterpenoid glycosides include sweet, odorless, and bitter glycosides.
Rubusoside, a diterpene glycoside with a high content, is chemically similar to
stevioside. It is 300 times sweeter than sucrose, has about 1% of its calories,
and offers a refreshing sweetness similar to sucrose. Rubusoside is safe to
consume, has no toxic side effects, and has the potential to lower blood lipids
and blood sugar, making it an ideal sweetener. It is particularly suitable for
patients with diabetes, hypertension, obesity, hyperlipidemia, and those who
cannot tolerate sugar. Therefore, it is widely used in the natural non-sugar
sweetener market, including food and health supplements.
